According to Dairy Farmers Marketing and Innovation General Manager, Lisa Miles, many Australians feel their mornings are complete only after downing a frothy cappuccino or a long milky latte.
“More than a million households in Australia now have domestic espresso machines – and not just as ornaments,” Ms Miles said.
And that’s good news for the nation’s dairy farmers. The boom in espresso style coffee has seen Australia’s annual average milk consumption per person begin to trend up towards 100 litres. Australians’ growing appetite for a good coffee fix has also bolstered demand for high quality milk products such as Crema – with enhanced texturing (frothing) qualities.
“A good barista is expected to produce a premium cappuccino every time, and so baristas are quite conscious of variations in milk quality,” Ms Miles said.
“For example, changing seasonal conditions can result in variations in milk protein levels. This can affect the quality and frothing capabilities of the milk. As such, we work hard to ensure that our products have standard high protein levels, regardless of what’s happening out in the paddocks. The higher the level of protein, the better the quality of milk.”
Ms Miles says that the resurgence in demand for white milk has also been strengthened by the variety of specialty products for different market segments.
“These range from premium full-fat milk to reduced fat milk, lactose free milk, custom-made milks with more or less calcium, ‘sleep’ milk to encourage good rest, and organic milk,” she said.

Ms Miles added that long-life heat treated milk was also gaining in market share.
“However, while UHT products dominate the market in Europe, I doubt whether this will occur to the same extent in Australia,” she said.
“Australians still value the connection between the land, the pasture, the cows, the farmer, and the final product. We still prefer a drink of sweet fresh milk.
“Milk is a basic health food in its simplest form. It contains calcium, some lactase – an easily digestible form of sugar – and vitamins, even before it is processed in any way. This makes it an ideal food or drink for both adults and children.”
