Char-grilled Salmon with Lemon and Caper Sauce

  • 1/3 cup Dairy Farmers Greek Style Yogurt
  • 1 tbsp olive oil
  • 1/2 tsp salt flakes
  • 1/2 tsp finely grated lemon rind
  • 2 tsp lemon juice
  • 1/4 cup mayonnaise
  • 2 tbsp drained capers, chopped
  • 1 tbsp finely chopped fresh dill
  • 4 x 250 g salmon fillets

Method

Ingredients
  1. Place yogurt, mayonnaise, capers, dill, lemon rind and juice in a bowl and stir to combine. Set aside.
  2. Brush salmon fillets with oil and sprinkle skin with salt.
  3. Heat a barbeque or cast iron grill over a high heat. Add salmon fillets, skin side down. Reduce heat slightly and cook for 5 minutes. Turn and cook other side for 2 minutes, or to your liking.
  4. Serve salmon with sauce.

Ingredients

Lemon and caper sauce can be made up to 6 hours in advance. Cover and store in refrigerator. Serve with a crisp salad.
