White Chocolate, Custard and Raspberry Desserts

Ingredients
- 100 ml Dairy Farmers Thickened Cream
- 500 ml Dairy Farmers Custard
- 80 g good quality white chocolate
- ½ cup crushed frozen raspberries
Method
- Melt the chocolate in a microwave safe bowl or in a glass bowl over gently simmering water (Avoid water or steam coming into contact with the chocolate as it will seize up).
- Divide the melted chocolate between four small drinking glasses about 1 cup capacity.
- Place glasses sitting flat into the freezer to set the chocolate for approximately 5 minutes.
- When set add and divide the raspberries between the glasses then add a 1/3 cup of custard to each glass and finish with whipped cream and shaved or grated white chocolate.
- Serve or re-chill until ready to serve.
Suggestion
Place frozen raspberries into a bowl and allow to thaw slightly before gently mashing with a fork this will make it easier to measure out ½ a cup.
