It is better to use Buttermilk in a recipe that has been specifically tested on Buttermilk. Merely substituting Buttermilk for milk may upset the acidic balance of the recipe.

Instead of mayonnaise use yogurt mixed with a little honey and fresh herbs for a light and naturally creamy salad dressing.

Combine 1 cup European, Traditional or Traditional Lite Yogurt, 1 tablespoon honey, 1 teaspoon cumin, 1 clove crushed garlic, ¼ cup each of finely chopped mint and parsley and salt to taste. Mix through chunks of roasted beetroot and kumara. Serve on baby spinach leaves and sprinkle with coarsely chopped toasted walnuts.
