Fantastic frostings
Sour Cream can be used straight from the fridge — no need to soften. These Sour Cream frostings are fabulous over banana or carrot cake, cup cakes and slices. Not suitable for Sour Lite Cream. Lemon frosting — combine ¼ cup Sour Cream, 1 tablespoon finely grated lemon zest and 1½ cups sifted pure icing sugar in a bowl. Beat with a wooden spoon until creamy. Lime Coconut frosting — combine ½ cup Sour Cream, ¼ cup coconut milk powder and 1 tablespoon finely grated lime zest in a bowl and beat with a wooden spoon until creamy. Add 2 cups sifted pure icing sugar and beat until creamy. Chocolate frosting — Place ½ cup Sour Cream in a bowl. Add 150g melted dark cooking chocolate and beat with a wooden spoon until smooth. Beat in 1½ cups sifted pure icing sugar.

Five Star Raita
Cucumber raita adds a welcome cooling partner to a curry. Also use as a dip or spoon over grilled fish. European Yogurt, cucumber, mint and Indian spice form a basic raita. For variety add some chopped mango or banana and coconut.
For basic raita: combine ½ cup European, Traditional or Traditional Lite Yogurt, 1 peeled, seeded and finely diced cucumber (about ½ cup), 2 tablespoons finely chopped fresh mint, ¼ teaspoon cumin or garam masala and salt to taste.
